Happy Pancake Tuesday, everybody!
We’ll be celebrating in style tonight at the 2nd Annual Maker’s Loft Pancake Tuesday party, and thought it’d be nice to share our favourite (American/Canadian) pancake recipe. This way, you can join in on the pancakes-for-dinner festivities!
1 cup flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1 tbsp oil
1 cup milk (or buttermilk)
a pinch of salt
Mix ingredients together, whisking the wet ingredients into the dry ingredients.
Spoon mixture onto a hot pan with a 1/4 cup measure, or a ladle. Cook for 2-3 minutes on each side, or until golden brown.
Serve immediately, with lots of butter and maple syrup. You can also add mixin’s into the batter - think blueberries, chocolate, banana, oats, apples - it’s infinitely adaptable!
Makes about 8 medium sized pancakes.
